"Learn the tricks of the trade and take home-brewing to the next level through a Professional Brewing and Fermentation Certificate series at West Texas A&M University.
The WTAMU Office of Extended Studies is offering the course through its Lifelong Learning program. Drs. Nick Flynn and Brian Schneider are teaching the four classes—two in the fall and two in the spring. The classes will meet at the WTAMU Amarillo Center in Amarillo, and each will be comprised of six three-hour sessions.
The professional certificate requires the successful completion of the four classes along with an internship in an instructor-approved brewery or fermentation lab. Students must be 21 on or before the class start date to register for the class.
The first of the four classes, Introduction to Brewing and Fermentation, begins at 6 p.m. Sept. 5 and meets each Wednesday through Oct. 10. This class explores the science of aerobic and anaerobic fermentation primarily in beer and brewery settings.
The second course, Fermentation Chemistry, meets each Wednesday night from 6-9 p.m. Oct. 17-Nov. 21. This class looks at the physiology of yeast growth and how carbohydrates are metabolized in yeasts.
Brewing and Fermentation Products is the third course in the series. Students will meet from 6-9 p.m. each Wednesday, Jan. 23-March 6. Students will learn the importance of measurement and analysis in product consistency and quality.
The final course in the professional certificate program is Brewing and Fermentation Practices. This hands-on class looks at fermentation design, usage and brewery operating procedures.
